About Vegan Cooking Schools in Boulder
- In 1983, the SNC opened for home cooks, and courses for professionals launched in 1991. The SNC expanded its programs in 2005 to include wine pairing and courses that focus on protein.
- The Professional School of Natural Cookery at the SNC offers a foundations course that requires 16 weeks to complete. The course covers a variety of topics, including breads, ethnic cuisines, desserts, plating, garnishes and sauces.
- The SNC offers a four-week course for personal chef training that includes one-on-one practice in private homes alongside a chef educator, as well as business basics like marketing and resume writing. It also offers a teacher certification course that consists of three weeks of classroom and eight weeks of online instruction.
- Called the Main Course, the SNC's foundations for at-home chefs consists of seven three-hour lectures and demonstrations. In addition to providing the basics for vegan cooking, the class also features information about how to adapt cooking for allergies and food sensitivies.
- The SNC offers a course in preparing protein-rich dishes that allows students to incorporate meats if they choose or to use vegan proteins like tofu, tempeh and seitan. They also offer courses in pastry preparation and cooking improvisation.
