How to Keep Fresh Dug Sweet Potatoes From Sprouting
- 1). Spread out unwashed sweet potatoes in a single layer inside a shallow box. Cover the box with perforated plastic. Washing speeds rot and may encourage the sweet potato to sprout prematurely.
- 2). Set the box in a dark, warm place, 80 to 85 degree Fahrenheit, to cure for 10 days. Curing allows cuts on the sweet potatoes to heal and improves the sweetness of the tubers. Cured sweet potatoes have a longer storage life than uncured ones.
- 3). Place the cured sweet potatoes in perforated plastic bags. The bag keeps the humidity high to prevent the tubers from drying out and the perforation allows excess moisture to escape.
- 4). Store the bags of sweet potatoes in a cool location at 55 to 60 degree Fahrenheit. Choose a dark storage room as bright light may cause the tubers to sprout.
