    • 1). If you are right-handed, grasp the tip of the sharpening steel by the handle with your left hand. Secure the tip of the steel firmly against the top of the kitchen counter.

    • 2). Pick up the handle of the knife to be sharpened with your right hand. Place the blade of the knife against the top of the sharpening steel, being sure to hold it at a 20-degree angle to the steel.

    • 3). Slide the knife down and across the sharpening steel while applying light force. The movement should be a slight arc, and your starting position should be at the base of the knife blade.

    • 4). Turn the blade over to the other side. Repeat steps one through three.

    • 5). Continue sharpening each side until six or seven repetitions have been performed.
