Purine is a naturally occurring substance in the body, but when levels of purine get too high, uric acid is overproduced and can lead to certain ailments, such as gout or kidney disease. Purine can be found in the foods you eat as well, so if you have these medical issues, avoid foods that are high in purine. - Liver is a filtering organ that contains very high levels of purine. Liver can be found in pate, sausages and specialty meat dishes. Avoid eating meats that you cannot identify or dishes that contain mashed or pureed meats.
- Sardines are very high in purine and should not be eaten on a low-purine diet. Although sardines are commonly eaten independently as a snack, they can often be included into seafood soups and stews.
