This free app recognizes your voice and translates speech to text. Since it is made by Nuance, Dragon Dictation's accuracy is excellent.
Although the app is designed for speech recognition, it is also a quasi note-taking app. It will store notes that you dictate. You can also send a note via e-mail. Or, copy the text and paste it into a different app, such as Pages.
At less that 5 MB, Dragon Dictation is not a large app. That's because the recognition occurs on Nuance's servers. It also means that you cannot use the app if you don't have access to the Internet. This can be inconvenient, as you will encounter situations where you'd like to use the app and can't.
Dragon Dictation is a clean, simple app. Converting speech to text is as easy as tapping a button and talking. There aren't a lot of controls or settings to distract you.
If you want the app to recognize names, you can grant it access to your address book. For people who are concerned about privacy, it is worth noting that you must explicitly grant the app access to your address book. It will not access it automatically.
