Hi, my name i s Matthew Silverman, and today I'm going to show you how to make oven-roasted Italian sausage. This recipe is a little bit unique and has some fennel seeds in it which gives it a very distinct flavor. In a mixing bowl, we start with five pounds of fresh ground pork butt. We season that pork butt with one and three quarters ounces of kosher salt. Mix them together well. In a small saute pan, toast the fennel seeds which are two tablespoons until they get a nice aroma. Mix the toasted fennel seeds with the pork butt and add garlic chopped quarter cup, one quarter cup of sugar, three quarters cup of chicken broth either homemade or bought from the store, one tablespoon of black pepper, one teaspoon of cayenne pepper, one teaspoon of chili flakes, two tablespoons of paprika and a half a cup of extra virgin olive oil. We take all these ingredients now and mix together well. Place on a sheet pan and roast in the oven at 400 degrees until golden brown.
