How to Make Homemade Maple Walnut Saltwater Taffy
- 1). Line a 9-by-9-inch baking pan with foil. Butter the foil and a spatula. Sprinkle the walnuts across the bottom of the pan and set the pan aside.
- 2). Grind the maple sugar or maple granules down to a powder in a food processor. Make sure there are no lumps.
- 3). Whisk the maple sugar or granules, cornstarch and salt together in a heavy pot.
- 4). Stir in the corn oil, corn syrup, butter and water into the sugar mixture.
- 5). Attach your candy thermometer to the side of the pot. Stir the mixture occasionally with a heat-resistant spatula as it cooks until it comes to a boil. Then, let it cook without stirring until the mixture reaches 260 degrees F.
- 6). Pour the mixture carefully into the foil-lined pan coated with butter and allow the mixture to cool enough so that you can handle it.
- 7). Butter your hands and use them to pull the slightly cooled mixture. Continue pulling it until it starts to stiffen, lighten in color and become glossy. Pull the taffy into a rope and cut the rope into small pieces with greased scissors or a greased knife.
- 8). Allow the taffy pieces to cool to room temperature, about an hour. Serve them or wrap them individually in wax paper.
