How to Bake Eggs Florentine
- 1). Saute onion in melted butter in a saucepan. Add flour, salt, pepper and nutmeg, and stir until smooth.
- 2). Blend in milk and bring to a boil. Reduce heat and simmer, stirring constantly, for 3 minutes. Add 1/4 cup Parmesan cheese.
- 3). Cook and drain spinach and combine with the milk mixture. Pour into a shallow dish.
- 4). Poach the eggs and arrange them on top of the spinach mixture.
- 5). Sprinkle the eggs with more Parmesan cheese and place under the broiler just long enough to melt the cheese.
