Mexican breakfast (desayuno in Spanish) combines hot sauces, chili peppers and tortillas with everyday morning foods like eggs and sausages. Real Mexican breakfast food tends to be spicier than its Americanized counterparts. You can use canned salsa and hot sauces or make your own homemade versions to add a personal touch to your meals. - Huevos Rancheros, one of the most popular Mexican breakfast dishes, appears on many menus in America and Mexico. Many alternative recipes exist for this ranch-style egg dish. Fried eggs, salsa and tortillas form the gist of this breakfast. To prepare a basic version of huevos rancheros for two people, chop ¼ onion and 1 (or more) chili peppers depending on your tolerance for spicy food. Add three mashed garlic cloves to the salsa mix. Put a dash of vegetable or corn oil in a frying pan to medium heat. Add the onion, chili pepper and garlic mix to the pan, and put in a pinch of chili powder. When the sauce boils, lower the heat and cook for 10 minutes. Spread cooking oil in another frying pan,and fry two tortilla 30 seconds on each side. Put the tortillas on a plate. Fry two eggs, but don't cook the egg tops. Then put one egg on each of the tortillas. Cover eggs with the homemade salsa sauce. Then do the same with the other eggs. Put shredded Monterrey cheese on top, and serve with refried beans on the side. You may use bottled salsa from the store for quicker preparation time.
- Many American fast-food restaurants have appropriated the Mexican breakfast burrito for their menus. For a different taste, prepare a more authentic version of the Mexican breakfast burrito at home. Brown sausage, either store-bought or from a butcher, in a frying pan for 15 minutes. Cut up the sausage with a spoon. Put the sausage in a covered bowl and keep it in an oven, preheated to 200 degrees. Take all the remaining fat from the frying pan except for 6 tablespoons. Peel four small boiling potatoes, grate them, then combine potatoes, salt and pepper and 1 teaspoon onion powder in a bowl. Cook potatoes in frying pan or skillet til they're brown on the bottom. Then cook until crisp on other side. Chop potatoes and put in a covered bowl; place them in the oven to keep warm. Take eight whipped eggs and cook for three minutes. Season with salt and pepper to taste. Then add the eggs, potatoes and sausage to warm flour tortillas, along with salsa and shredded jack or Monterrey cheese. Wrap tortillas around the meat, eggs, salsa and cheese to form a breakfast burrito.
- The syrup-free Mexican version of pancakes can be eaten by themselves or with eggs added. They only take 20 minutes to prepare and cook. Mix ¾ cup flour, 1/3 cup corn meal, 1/3 cup masa (Mexican flour) and ¼ cup sugar, along with a pinch of salt and 1 teaspoon of baking powder, in a bowl. Combine wet ingredients---2 eggs, ¼ cup cooking oil and 1 cup milk---in another smaller bowl. Mix the wet and dry ingredients together in the large bowl. Don't mix too finely; you can leave lumps in it. Add 2/3 cup chopped jalapenos from a can and 1 cup canned or thawed frozen corn. Heat on an oiled griddle, like you would cook pancakes. Brown for two minutes on each side. Eat plain or topped with strawberries, apricots or other fruits, or with fried eggs.
