How to Vacuum Seal Fruits for Freezing
- 1). Clean the fruits. Wash and dry them thoroughly, and remove any leaves, twigs or other non-fruit items that may have gotten mixed in.
- 2). Prepare the fruits. Peel and slice the fruits, if necessary. Drop the sliced pieces into a bowl of water with lemon juice (about one-quarter cup of lemon juice per quart of water) to prevent browning. Do not allow fruits to sit in the lemon juice and water mixture for more than 15 minutes, as they will absorb the lemon flavor, become waterlogged and lose their texture.
- 3). Lay the fruit flat on a baking sheet. Pat the fruit dry, and arrange the pieces on a baking sheet so they aren't touching. Cover with plastic wrap. If you want to store fruits in pre-measured amounts (such as one cup or two pounds), measure them now and place only that amount on the baking sheet.
- 4). Freeze fruit for 15 to 30 minutes. Place the baking sheet on the cleared freezer shelf. Leave it there until the fruits are just frozen.
- 5). Place the fruits in a vacuum sealer bag. Because the fruits are already frozen, don't worry about doing this neatly. Work quickly to keep the fruits frozen and prevent sticking.
- 6). Seal the bag by following the instructions for your vacuum sealer. Return the sealed bag to the freezer until you are ready to use the stored fruit. Vacuum-sealed fruits can be frozen for up to one year.
