Fig and Gorgonzola Pinwheels
Like savory palmiers, these crispy pastry rounds are a delicious snack or appetizer. The combination of sweet fig spread and briny cheese is particularly addictive, but if you can’t find fig spread (I use Trader Joe’s Fig Butter) you could also use raspberry jam.
Some puff pastry tips: If you are using packaged puff pastry, which can be found in the freezer section of most supermarkets, be sure to thaw it completely (overnight in the refrigerator or for several hours on the countertop) before trying to unfold it and work with it. And make sure your work surface is well-floured so that the dough won’t stick as you’re rolling it out. Once you’ve rolled up the pinwheels, it is essential to freeze them for at least an hour, otherwise they will not hold their shape when you cut them.

1. On a floured work surface, roll puff pastry to a rectangle, roughly 10 by 14 inches. Using an offset spatula, spread with fig jam, leaving a thin strip uncovered along one long side. Sprinkle an even layer of crumbled gorgonzola cheese over the surface. Roll tightly, jelly roll style, along the long side. Wrap in plastic wrap and freeze for 1 hour, until firm.
2. Preheat oven to 375°F. Line baking sheets with parchment.
Remove from plastic wrap and slice into very thin, 1/4-inch rounds. Place the rounds on the prepared baking sheet. Bake for 10 minutes, or until crisp and golden. Remove from baking sheet, let cool on racks for 10 minutes. Serve warm or at room temperature.
