Video: Recipe for Chicken Salad With Cream Cheese & Grapes

Hi. I'm Ula Robertson Nuemann and I'm chef and owner of At Your Service NY Catering located in Rockland County New York. Today, I'll show you how to make a chicken salad with blue cheese and grapes. And here's what we need for it. The ingredients we are going to need are cream cheese at room temperature, pepper and basil, a few chopped up tomatoes, chives, scallions. For the grapes I have both black and green grapes. Both are seedless and they are cut in half. And the chicken is poached chicken cut up into cubes. The first thing we are going to do is take the cream cheese and the spices, this is pepper and basil. You might have noticed that I didn't put any salt in the cream cheese and you know, it come salted already and also the chicken had been poached in lightly salted water. So this should be enough for the salad and if not I can always adjust the salt at the end of the dish. So we stir it around a little bit, OK. Just like this. So the next ingredient is the tomatoes. I like to add tomatoes because they give that juice to the cream cheese and that's really tasty. So the next ingredient is the chives, the scallions, and the grapes. It's a little bit tedious work but it gets better as the fruit gives their juices to it. And the last thing is the chicken. We stir it around until the chicken absorbs the cream cheese and the juices and we are ready to serve. I like to top it off with a few more chives and voila, here you have it, chicken salad with grapes and chives, the ooh la la way.
