Southern Buttermilk Jam Cake

Pumpkin Cake Roll with Cream Cheese Filling

Ingredients

• 1 cup semisweet chocolate chips
• 8 tablespoons (4 ounces) butter
• 2 tablespoons milk
• 1/2 cup sugar
• 1/3 cup candied cherries
• 2/3 cup sliced almonds
• 2tablespoons raisins
• 1 pkg. (sleeve, or 1/3 of a standard box) graham crackers

• Prep Time: 25 minutes

• Total Time: 25 minutes
• Yield: 1 Pan

Preparation

Line an 8-inch square or round pan with a large piece of foil. Press carefully into pan; do not tear the foil.

Chop cherries.

Break graham crackers into small pieces in a bowl, add cherries.

In a saucepan, melt chocolate chips with butter then add milk; stir over low heat.

Add raisins and almonds to the cracker mixture.

Pour chocolate sauce over cracker mixture and mix well. Spoon mixture into cake pan and press more cherries on top.

Cover cake with foil and press down firmly.

Put cake in refrigerator to chill for 2 to 3 hours.

Lift out of pan and remove foil.

Store cake in refrigerator.
