How to Prepare a Vegan Portobello Mushroom Burger
In Italian, Portobellos are called "capellones," which means "big hats.
" Portobellos are actually mature Crimini mushrooms (they're about 3-5 days older than Criminis).
They have a lot of vitamins (including potassium and Vitamin B), antioxidants and minerals (including selenium).
They're also very high in fiber and low in fat.
While most other foods lose some of their antioxidants after being cooked, Portobellos retain their antioxidants even after being cooked.
This recipe is for a great Roasted Portobello Mushroom Burger.
Heat the oven to 400 degrees.
Place the Portobello mushrooms on a baking sheet and brush them on both sides with a mixture of 2 Tablespoons of olive oil and 1 Tablespoon of balsamic vinegar, then sprinkle with a pinch of salt and pepper.
Roast in the oven at 400 degrees for 30 minutes.
While the mushrooms are roasting, combine 4 Tablespoons of olive oil, 2 cloves of minced garlic, 1 teaspoon of crushed red pepper, ½ teaspoon of sea salt and an 1/8 teaspoon of ground black pepper.
Whisk until mixed and then set aside.
You will brush this mixture on your bread or bun when you're ready to serve.
Finally, it's time to make the Tomato Basil Dressing.
In a food processor, put all the following ingredients: 3 ripe medium tomatoes, chopped; 2 Tablespoons of red wine vinegar; 1 Tablespoon of real lemon juice; 4 cloves of crushed garlic; 4 Tablespoons of fresh basil, chopped; ¼ teaspoon of sea salt; and an 1/8 teaspoon of ground pepper.
Now blend all these ingredients until smooth.
If you're not using it immediately, place in the refrigerator until ready to serve.
When the Portobelllo mushrooms are done roasting, take them out of the oven.
You can serve this on any kind of bread, including hamburger buns, whole grain rolls, rustic loaves, whatever your preference.
Take two slices of bread or two halves of a bun, brush them with the olive oil mixture.
Then place a Tablespoon of the Tomato Basil Dressing on the top piece of bread.
Place a mushroom on the bottom piece of bread.
Top the mushroom with lettuce, onion, tomato slices, or whatever you like on your burgers.
A variation of this recipe includes roasting Red Peppers along with the Portobello Mushrooms, and placing the roasted peppers on top of the mushroom in the sandwich.
You could also substitute other roasted vegetables and/or a slice of your favorite kind of cheese.
