Brisket Benedict
I like the things you can do with leftover brisket so much sometimes I make an extra and hide it from the guests. This breakfast brisket recipe is a great way to get some barbecue in your morning. I know that you typically pour hollandaise on your benedict, but I find this cheesy bechamel to go perfectly with the smoky flavor of the brisket.

Ingredients
- 4 english muffins, split and toasted
- 8 slices smoked beef brisket, cut in half and warmed
- 8 eggs poached
- 2 cups/240 mL cheesy bechamel sauce
- hot sauce (optional)
- Prep Time: 5 minutes
- Cook Time: 5 minutes
- Total Time: 10 minutes
- Yield: Serves 4 two benedict per person
Preparation
Place english muffins on a plate. Top with two pieces of beef brisket. Add one poached egg per muffin and pour over 1/4 cup/60 mL of cheesy bechamel sauce. Add a few dashes of hot sauce if so desired.
