Much has been said about the Danes. Like they seem reserved at first and are obsessed with bikes, food and ‘hygge’ - Danes are always on time, they appear liberal yet traditional and leave their babies outside in prams while they shop. We at Evil Twin Brewing teamed up with fellow Dane at Chocopologie and decided to set the story straight with a IPA infused with cocoa and even more Denmark. The punctual aromas, comfortable taste and liberating body will make you feel like one of the happiest people on earth.

What bikes or babies in prams have to do with beer isn't clear, but non sequitors do not seem out of place with Evil Twin Brewing. This time, partnering with Westbrook Brewing Company, Evil Twin has produced a follow up to their Even More Denmark chocolate stout, keeping the chocolate but dropping the stout. Even More Denmark 2014 is a cocoa IPA, pairing cocoa nibs from Danish chocolatier Chocopologie with a bunch of hops.

Danish Evil Twin Brewing began crafting beer in 2010, started by Jeppe Jarnit-Bjergsø who was a schoolteacher at the time. But unlike most other brewing companies, Evil Twin does not actually operate a brewery. Evil Twin Brewing is what is known as a gypsy brewery, a brewery that produces beers using other breweries' equipment and premises typically for limited release or seasonal beers. Gypsy brewing grew out of Scandinavia, but has since spread to America and other countries. Jarnit-Bjergsø's identical twin, Mikkel Borg Bjergsø also operates the gypsy brewing company Mikkeller.

Jarnit-Bjergsø's beers are a mix of standard styles like IPAs and stouts, and experiments with standards like the Femma Fatale line of beers, brewed with Brettanomycesyeast and fruits like Kabosu or Sudachi. There are currently ninety beers listed on Evil Twin's website.

Even More Denmark 2014

This IPA pours a hazy orange to gold hue with mild sediment throughout. Retention of the medium head is weak, leaving some lacing around the glass. In addition to citrus, the nose is tropical with hints of light stone fruit, peach, and apricot. There is a darker note on the nose along with pronounced malt, but there is no apparent aroma of cocoa.

The mouthfeel is a balanced medium body with moderate to low levels of carbonation. There is more IPA on that palate than cocoa, but perhaps the cocoa adds to the slightly warmer bitter notes behind this malty IPA. Citrus dominates the flavor profile with notes of biscuit, peppery spices, caramel, and more stone fruit. There are slightly earthy notes that blend into slightly sweetened black tea flavors which add to a pleasant bitter undertone.

Overall, this is an interesting IPA that does not veer off the track as much as its style would suggest.
