    • 1). Mix up your favorite pizza dough recipe by hand. Roll into a ball on a floured surface. Make four incisions on the top of dough from the center to the outside of the dough ball to prevent the dough from breaking at the surface when it rises. Place in a bowl coated with nonstick cooking spray. Lay a towel over the bowl. Allow the dough to rise in a warm, dry place for 1 1/2 to 2 hours.

    • 2). Sprinkle bread flour on a flat surface. Place the dough on the surface and sprinkle the top with flour. Put your knuckles on top of the dough. Press down and flatten the dough, so that it is about four inches in diameter.

    • 3). Flatten the top of the dough with your palms. The dough should flatten to six to eight inches in diameter.

    • 4). Stretch the dough gently from the center outward with your fingers. Move clockwise stretching the dough from the center outward. Rotate the dough to keep an even thickness.

    • 5). Sprinkle a round pizza pan with cornmeal. Fold the dough in half to transfer it from the counter to the pizza pan. Quickly unfold the dough. Spread sauce and toppings on top of it. Place in a 400-degree oven for roughly 20 minutes or until cheese is bubbly and crust is golden.
